Edamame & pea dip

Please the party with a summery superfood dip that’s packed with protein and antioxidants – rich in flavour, creamy in texture and pleasing to the eye.

The fresh spirulina amplifies the dip’s health benefits without any impact on the taste whatsoever. Serve with tortilla chips, pitta bread or your favourite crunchy vegetables!

Method

Step

Cook the peas and edamame in a pan of boiling water until tender, for approximately 3 minutes, or according to package instructions. Drain and allow to cool

In a food processor or high-speed blender, blend all the ingredients until you have a smooth mixture

Taste and adjust seasoning, if desired

If the dip is too thick, add a touch of water until you reach your desired consistency

Transfer the dip to the serving bowl. Garnish with a drizzle of extra virgin olive oil and torn mint leaves

Serve alongside your choice of fresh vegetables, toasted pitta or bread
