Spirulina & coconut energy bites

These vegan energy bites contain a selection of nutrient-dense seeds and nuts – with enough energy to satisfy your sugar cravings, and a burst of energy which will be sure to remedy a mid-afternoon lull. Their richness in protein also make for great pre- or post-workout snacks.

Method

Line a sheet with parchment paper and set aside.

Using a blender or a food processor, blend the sunflower/pumpkin seeds until a coarse crumb like consistency. If you blend too long, oils will release and you'll make a seed butter.

Add the remaining ingredients and process until well combined. The mixture should be smooth but still has some texture. It should be sticky and easily stick together between two fingers.

With your hands, roll the mixture into small, bite-sized balls. You can use a small cookie scoop to make sure they are all even size. Roll each ball in desiccated coconut.

Eat immediately or store refrigerated in an airtight container for up to a week.
